Pattypan Squash & Potato fry up
Serves 2
Ingredients
4 new potatoes
2 Pattypan squash
2 Tablespoons of olive oil
Few drops of lemon juice
Fresh Herbs of your choice
Recipe
Wash the potatoes clean and slice evenly, about 1 cm. Wipe the Pattypans, trim off the stem, and cut into 1 cm slices. Parboil the potatoes for about 5 minutes so softened.
Use here a large frying pan. Add a half tablespoon of olive oil, and let slightly warm up. Now add salt and pepper to the potatoes, stir gently and place the potato slices in the pan, spreading evenly.
Fry on a low heat for about 10 minutes, turning over as they begin to colour. Now add the Pattypan slices and stir gently. Add some more olive oil and stir. Cook until the Pattypan is tender and looking golden in colour.
Add the lemon juice, stir once again. Place on a warm serving dish, and add the chopped herbs
Suggestions
Herbs could be – Basil, curly or flat parsley, apple mint, cut finely and sprinkle on top
Serve with a green salad of lettuce, cucumber and rocket
