Turkey and Mange tout stir fry

Serves 2 to 3

Ingredients
350 g turkey breast fillets
Salt and pepper seasoning to taste
2 shallots
2 medium red chillies
125 g Mange tout
Tablespoon of Olive oil
1 Lemon
2 g butter

Recipe
Prepare the ingredients as follows. Remove the tips of the mange tout and cut in half. Peel and slice the shallots. Wipe the chillies, halve length ways and de seed, and then slice very thinly.

Rinse the turkey fillets, and cut in to thin strips, so even in size. Season the fillet strips with salt and pepper. Squeeze out the juice of the lemon.

Drop the Mange tout into a pan of boiling water for one minute, then drain.
Heat a frying pan and put in half a Tablespoon of olive oil. Fry the shallots and chilli for a few minutes. Turn the heat up a little and add the turkey fillet strips, gently stir until meat is cooked through and turns a golden brown, about 5 to 7 minutes. Add a little more olive oil if necessary.

Finally stir in the mange tout, butter and the lemon juice, heat and serve hot straight from the pan or transfer to a warmed serving dish

Suggestions
Use pork or chicken fillets instead of turkey
Use broccoli sprigs or snow peas or chopped cabbage instead of Mange tout
Sprinkle fresh tarragon on top before serving
