1 small marrow
4 large tomatoes
1 large onion
4 stalks of celery
Salt and pepper and sugar for seasoning
1 oz butter
Pre heat the oven to 180C / Gas 4
Wipe and peel the marrow, cut in half lengthways and take out the seeds. Cut the marrow into small pieces. Skin the tomatoes and slice them. Peel and slice the onion fairly thinly. Scrub the celery stalks and slice thinly.
Grease a casserole dish with butter. Place in the dish alternate layers of marrow, tomato, onion and celery, sprinkling on top of each layer a mix of the salt pepper and sugar. Finish with a layer of marrow, and dot over the butter.
Put the casserole lid on, and cook in the centre of the oven for about 45 to 60 minutes.
