8 hard boiled eggs
1 long leaved lettuce
Salt and ground black pepper
2 Tablespoons wine vinegar
4 tablespoons virgin olive oil
1 Tablespoon parsley, finely chopped
2 Tablespoons grated hard cheese
Remove the shells from each egg and keep in cold water. Separate the lettuce leaves and wash carefully, remove any coarse stems. Tear big leaves into halves.
Peel and chop finely the onion. Slice the eggs
In a salad bowl arrange some the salad leaves at the base. Now layer the eggs then sprinkle over the onion. Layer more lettuce and so on to a final layer of sliced eggs
For the dressing, place salt and pepper into a mixing bowl, add the vinegar, stir well, and then add the olive oil. Add some of the chopped parsley mix again and pour over the salad.
Sprinkle with the remaining parsley and the grated cheese
Add Soy sauce or a smooth French mustard to the dressing if liked
