Courgette with cheese topping

Preheat the grill and lightly oil a baking tray.

Melt 2 oz butter in a large pan. Stir in 2 courgettes, cut in half inch slices.

Cook slowly, stirring and turning over until golden brown. Spread the courgette slices on the baking tray and sprinkle on 5 oz grated cheese.

Grill until the cheese is melted, takes about 3 minutes
