Beetroot Salad

Recipe
Top and tail a beetroot, wash carefully, and peel. Slice very thinly, or coarsely grate, and add salt and pepper to suit. Mix in chopped flat leaved French Parsley.

Suggestions
Serve as a starter or as a relish with cold cuts such as lamb or beef
